Functional blend for salami: powder mixture intended for the cooking of ground meat and fresh fish salami. Powder is light beige with dark specks and very fine granulation.
Ingredients:
Aromatic components: Aromatic preparations, Natural flavoring substances. Other ingredients: Salt, pink pepper, parsley, cinnamon, nutmeg, cloves, paprika, white pepper, juniper.
Directions for use:
Net weight 440 g per 50 kg of meat mixture. Indicative recommended quantity 8.8 g/kg of mixture (dosage to be verified for each specific technological process). The product is complete with salt. Disperse the blend evenly during mixing. To ensure homogeneous distribution of ingredients, mix at low speed for 15–20 minutes.
