Powder mixture intended for the processing of fresh fish. Powder of light beige color with very fine granulation. The aroma is pleasantly spicy, slightly pungent.
Ingredients:
Salt, sucrose, dextrose, sodium ascorbate (E301), sage, parsley, flavoring substances, garlic, natural aromatic preparations.
Directions for use:
2000 g per 10 kg of fish.
Recommended quantities which must be verified for each specific technological process. The product contains salt.
The blend is supplied with the standard operating procedure for swordfish production and the climatic recipe to be set on the Stagionello® fish curing device.
