Powder mixture intended for the processing of ground meat and stuffing of fish and for the production of bottarga. Powder is light beige-white with dark specks and very fine granulation.

The Sicursal blend for Fish Hams is designed for those who want to customize their recipes and is validated with the climatic recipe for producing bottarga, tuna and swordfish salami, shrimp salami, and fish ‘nduja.

Directions for use:
Recommended quantity 30 g per kg of mixture. Indicative quantities that must be verified for each specific technological process.

Ingredients:
Salt, dextrose, sucrose.
Antioxidants: Sodium citrate (E331), Sodium ascorbate (E301).
